I made these this morning. Oh! My! Goodness!!!!! 😋 I had 3 cups left last Saturday when I divided my starter after giving 2 cups to a friend, making the gingerbread with another cup and starting a new starter with another cup. I just didn’t have time to do anymore baking that day so I divided those into 1 cup portions in 3 small containers and put them in the fridge. I decided yesterday that I wanted to try this recipe today so I took those out of the fridge, poured them all into 1 bowl and put them into my oven with the light on. Left it all afternoon and last night I fed that with 2/3 cup of flour, 1/3 cup of sugar and 2/3 cup of milk.Left it in the oven all night and this morning it was wonderfully bubbly and ready to go. The only thing I did differently to this recipe is I used 1 1/2 cups of starter. The muffins are delicious and oh so tender and fluffy! YUM!!!!!!😋😋😋😊

What does the flax meal do? It’s not something I have on hand, so is it essential? Thanks!
Janice says
bobbie Neither do I. Hopefully they will answer. Would love to try this recipe, but I hate to buy this ingredient since I don’t know of anything else I would use it for. 🤷

Should I be separating out cinnamon sugar from tbe recipe or should i make a cinnamon sugar mixture separate from the recipe? Thanks!
Rebekah says
HI Arminda! The cinnamon and sugar mixture should be separate from the recipe!
Mary Deterding says
Can i use fresh chopped apples instead of the sauce
Rebekah says
Hi Mary! Because the applesauce adds moisture to the recipe (in a different way than chopped apples), I would recommend throwing your chopped apples into a food processor or high-powered blender, if you have one. However, if you want the texture of whole apples, you could also put it in as an add-in (I would recommend not more than a cup for these muffins).

I made your pumpkin cheesecake spice bread using canned pumpkin. Turned out great. I had some pumpkin leftover,so I made the apple cinnamon spice muffins and used the rest of the pumpkin instead of the applesauce. They turned out great too!! I love being able to substitute! Thanks for the great recipes!!
