Bonus — Is there a way to use just starter (maybe 2 cups instead of 1) instead of adding yeast (for those recipes calling for it)? Double starter and lessen sugar amount, let rise so long at room temp before finishing the rest of recipe? A tutorial on how to alter these recipes?

If you have a very active and bubbly starter, you can skip the commercial yeast, Vicki. It may take longer to rise, so you have to be patient, and like all sourdough bread recipes, sometimes they work and sometimes they don’t. You’ll have to trust your starter — whenever I bake bread or rolls exclusively using the starter, I’ll scoop out a cup of starter and it will continue growing in the time that it’s waiting to be added to the bowl. I’ll put a tutorial on adapting recipes on the list, Vicki — thanks!

I watched 2 tutorials. I was on the starter and the other was to tell how to tell a good starter from a bad one. I am new doing this and am so interested in learning all I can . My kitchen is cooler and I have started a starter on Dec 7 when I found your website. I have stirred it each day but have not seen bubbles as yet. I hope I am doing it right. I covered it with plastic and put it in a low lighted place. You didn’t say if it needs lots of light or not.
I also make JUN Tea. and it stays in the dark but well ventilated place. . I really enjoy making JUN and love drinking it and I am excited about making the Amish Friendship Bread. I hope I can do this right. I started another batch of starter today ( Now I have 2 ) using active yeast in it. I got the recipe from your website. thank you for this challenge . I think it will help me learn what to do.
