If you can’t find the sugar-free cheesecake instant pudding, use sugar-free lemon instant pudding or sugar-free vanilla instant pudding for this recipe.
While this recipe does produce two loaves of bread, they are smaller than the standard recipe loaves and do require a shorter bake time. You can also dress this up with some poppy seeds or increase the amount of lemon rind or lemon extract to boost the lemon-y flavor.
Lemon Cheesecake Amish Friendship Bread

Ingredients
- 1 cup Amish Friendship Bread Starter Sugar-Free
- 3 eggs
- 1 cup oil
- ½ cup milk
- 1 cup Splenda
- 1 teaspoon lemon extract
- 1½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon baking soda
- 2 cups flour
- 1 box sugar-free cheesecake instant pudding
- 2-3 teaspoons finely grated lemon peel
Instructions
- Preheat oven to 325° F (165° C).
- In a large mixing bowl, add ingredients as listed.
- Grease two large loaf pans.
- Pour the batter evenly into loaf or cake pans.
- Bake for 40-45 minutes or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.
- ENJOY!

I want to try the sugar free and am using your starter recipe. I clicked on the “ handle starter according to the instructions for Amish Friendship Bread.” in the recipe, but the directions there show adding sugar, milk and flour during the 10 days. Shouldn’t it instruct to add an artificial sweetener to maintain sugar free?

Can you use something like Pyure (erythritol and stevia) to make the starter?

Hi Tracy! I hadn’t tried it so I don’t know. Regular sugar actually feeds the yeast, so I’m not sure how something like Pyure would metabolize in the starter. Please keep me in the loop if you end up experimenting, and in the meantime I am going to add this to my list of ingredients to explore!

I would suggest whatever sugar-free pudding you have that would compliment the lemon flavor, probably vanilla or french vanilla or lemon. I think in the U.S. people just *like* the cheesecake flavor best or that is what the person who created this recipe used. HTH.

I have used vanilla or French Vanilla instant pudding instead of the cheesecake flavor and it worked fine.
