You can’t get this Amish Friendship Bread recipe wrong … with a trifecta of lemons (lemon pudding, lemon extract, and lemon peel), this tangy and sweet bread is as bright as a summer day.
Triple Lemon Amish Friendship Bread
A trifecta of lemony ingredients — lemon pudding, lemon extract and lemon peel — make this Triple Lemon Amish Friendship Bread bright and flavorful.
Ingredients
- 1 cup Amish Friendship Bread Starter
- 3 eggs
- 1 cup oil
- ½ cup milk
- 1 cup sugar
- 1 teaspoon lemon extract
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon baking soda
- 2 cups flour
- 1-2 small boxes instant lemon pudding
- 2 teaspoons lemon zest finely grated
- Lemon Glaze
Instructions
- Preheat oven to 325° F (165° C).
- In a large mixing bowl, add ingredients as listed.
- Grease two large loaf pans.
- Dust the greased pans with granulated sugar.
- Pour the batter evenly into loaf or cake pans.
- If desired, lightly but evenly top with a lemon streusel mix.
- Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.
- ENJOY!
Notes
Top with a lemon glaze or our simple streusel, and bump up the lemon factor by including finely chopped lemon rind in either. You can dust your loaf pans with a sugar-lemon rind mixture.

Can I use sugar-free pudding instead of regular instant pudding?

Made this recipe and was delicious. I used coconut oil and extra vanilla. Only had 3 cups of powdered sugar and probably used a little more zest. It made 1 loaf and 12 regular size cupcakes & 5 tiny cupcakes. I did not use nuts. Yummy.

Trying to start making this and got out an old amish friendship bread recipe and it says to use self rising flour. This recipe does not specify. What do you recommend?

I used 2 boxes of lemon pudding mix for the flavor and bakes a pan of mini-muffins and 3 small loaves. The flavor is nice but the texture seems dense and gummy. I even noticed when putting in the pans that it had started to “set.” I’m assuming the pudding is the culprit. I’m not sorry that I tried it but won’t make it again.

Did you bake at 350 or 325? If 350 that would explain the gummy texture.

Pudding boost flavor and moisture, and some people prefer 1 small box, others prefer 2, and some actually don’t use any at all! I know this seems a bit vague, LOL, but the original Amish Friendship Bread recipe was written this way so we’ve followed it with the earlier recipes. This is a stellar hit! I have gone beyond this recipe, adding a generous cup of fresh blueberries and making muffins, topped with lemon streusel and drizzled with a lemon glaze. I made the mistake of giving away muffins to friends and now I get demands for more of these muffins! 😃

Ok when you say I cup of Amish friendship bread starter….. is that on the last day after you mix in milk sugar and flour…..or after the second step of adding eggs bp, bs, vanilla, sugar flour milk etc……
Or do you take one cup straight out of the bag on the last day before doing anything else to it?
I am sorry I have just seen recipes calling for this exact thing., and do not know at what point of the proceeds I take that 1 cup need. if you could explain I would very much appreciate it.

It can either be on Day 10, after you give it one last feeding, and THEN take out one cup of the starter to add to your recipe (so if you are following the 10-day instructions, on Day 10 when you would normally make regular Amish Friendship Bread with your one cup, you’ll now make this recipe instead). If you are keeping a starter on your counter, then you would just take out one scoop when you’re ready to bake.

Hi Melanie! We haven’t tried a potato flake starter with this recipe before, so you’ll have to experiment a bit if you want to use your potato flake starter! We would probably recommend adding a little more flour to make up for the lack of flour in your starter (maybe 1/2 cup). Let us know how it goes if you try!

I LOVE this recipe! It is beautiful baked in a bundt pan drizzled with glaze or sprinkled with powdered sugar. (Recipe fit nicely in a bundt pan and was done in an hour at 325). A slice covered with fresh peaches or berries, and a dollop of whipped cream? Divine. Thanks for a great recipe.
